Healthy "Vodka" Sauce. only vegetables.


When I go out to eat I usually eat pasta or pizza. Pasta with vodka sauce is my favorite. It's made with Heavy Whipping cream, which isn't really good for you. Well...I had cooked lentils that needed some extra love, so I took out my magic bullet, because I love to blend my vegetables and fruits...well I'm into blending everything lately. I used a few ingredients, and when I was done, my creation tasted like vodka sauce..and its even similar in color, except with no whipping cream and no vodka. It's really tasty and super healthy. I added this to my lentils (which were previously cooked with onion, olive oil and salt), and at them with a baked sweet potato. YUMMY. You tell me if it tastes like vodka sauce to you.

For about 1 cup you need:

3 oz baby carrots
2-3 tbsp olive oil
1 stalk celery
1/3-1/2 cup canned tomato sauce
salt and pepper to taste
any blender


What to do:

1. Chop the baby carrots in the blender.
2. While the carrots are still chunky, add the salt, pepper and olive oil. (should be partly creamy with    
               small carrot pieces.)
3.  Cut the celery stalk into about 8 pieces and add to your blender.
4. Add 1/3 cup sauce and blend until creamy. (Add the sauce gradually, because if you add too much 
               sauce it tastes tomatoe-y)



*If its not creamy enough you can add a little more olive oil.
*If you've added too much sauce,  just add more carrots and celery. You can also easily fix it by doubling the ingredients.

Yummy Cran Apple Flax Cake

1.5 cups flax meal
1.5 cups white flour
1 cup brown sugar
1/2 tsp salt
2 tsp baking soda
1 tsp baking powder
1/4 cup milk
1/2 cup apple juice
2 flax "eggs" (2 tbsp flax meal in 6 tbsp water)
1 peeled, shredded apple
1/2 cup dried cranberries/craisins
1 tsp vanilla extract

What to do:
1. Preheat your oven to 350
2. Mix flax meal, flour, brown sugar, salt, baking soda and baking powder.
3. After well mixed add flax eggs. Mix.
4. Add milk, apple juice and vanilla. Mix well.
5. Line a pan with aluminum foil or grease your pan. I'm not sure if there will be a time change if you don't use aluminum foil like I did, but pour the batter into your pan and bake 30 minutes.

Sprinkle with powdered sugar and enjoy.
